Three new eateries have made their debut at Toyota Music Factory in Irving, including a well-known spot: the complex now hosts Jaxon Texas Kitchen, Shoals Smokehouse, and Pistil Cocktail Lounge. These establishments have launched under the helm of Hospitality Alliance, managed by CEO Kevin Lillis, whose portfolio includes AT&T Discovery District and One Victory Park.
The Toyota Music Factory launched in 2017 and later saw renovations starting in 2024. These updates encompassed enhancements to the exterior stage, public square, and shop fronts within various leased areas. The refurbishment project concluded in January 2025.

The three recently opened eateries and drinking spots were crafted by The Ferro Collective and managed under the expertise of Chef Andrew Dilda, who is renowned for his work with establishments like Reata and Lonesome Dove Western Bistro. These venues offer different culinary experiences: they serve traditional southern dishes at Jaxon, mouthwatering barbecue at Shoals Smokehouse, and handcrafted cocktails at Pistil.

For earning a CultureMap Tastemaker Award for Best New Restaurant in 2021, this establishment has returned to DFW as a sprawling 10,000-square-foot, two-level venue dedicated to Southern hospitality. It welcomes guests every day for both lunch and dinner, offering a selection of signature items along with refined takes on traditional Southern cuisine prepared by Chef Dilda. The focus remains true to classic Texan flavors, prioritizing genuine quality over mere aesthetics.

The decor boasts a warm indoor/outdoor setting that integrates Texan-themed touches. Notable design features consist of a bespoke mixed-media montage showcasing Hollywood icons from Texas, deer-antler embellished beer dispensers, succulent-filled terrariums at the entrance, and seating areas with earth-tone banquettes.

The menu showcases smoked meats, fried chicken, and traditional Southern side dishes, paying homage to the tastes of the South. This eatery offers patio dining with views of the outdoor plaza stage, a sliding glass partition that brings the outdoors inside, television sets scattered around, and a central full-service bar at its heart.
Pistil Cocktail Lounge

Created and run by Angela Montesclaros, who serves as the Beverage Director at Hospitality Alliance, Pistil acts as the “sister” establishment to Jaxon. This venue specializes in offering an exclusive nighttime experience with a mix of gothic Western and Wild West aesthetics. It stands out as a chic retreat managed and decorated by women, catering specifically to patrons seeking a spot where they can unwind—whether it be over crafted cocktails, engaging conversations, or some delicious barbecue.
Pistil presents a selection of wines sourced from prestigious vineyards, featuring options from sustainably managed lands and those owned by women. The culinary offerings consist of petite plates and seasonally inspired dishes that spotlight local Texan agriculture. Nestled within this space is a hidden garden where herbs and decorative touches for cocktails are freshly plucked by the bartenders. Distinctive decor includes an intricate stained-glass artwork depicting a breathtaking sunset over West Texas.
